Lavender And Champagne Sorbet

Lavender And Champagne Sorbet
serves 4

1 cup (8 oz) white wine
1 cup (8 oz) water
juice of 2 lemons
4 egg whites well beaten
1 cup (7 oz) caster (superfine) sugar
1/2 cup stalkless lavender flowers, dried in the oven or microwave and
crumbled to powder

Blend all the ingredients until well mixed. freeze the mixture,
stirring every 20 minutes during the freezing process. Serve slightly
slushy.
